AFRITADA is a popular Filipino-Spanish inspired dish that traditionally uses meat like beef or chicken and stewed in tomato sauce and broth. This recipe is meatless and vegan and used gluten meat as a substitute and added potatoes, carrots, bells peppers, celery and in most occasion, green peas can be added.
VEGAN AFRITADA OR MEATLESS STEW
Ingredients
1 1/2 lbs. Seiten chunks or strips or any meat substitute
1 large carrots, slices
2 large potatoes, cubed
2 stalks celery, slices
1/2 c. red & green bell peppers, diced
1 medium onion, diced
3 cloves garlic, minced
8 oz. tomato sauce
3 pcs bay leaves
3 c. vegetable broth
3 TB oil for sautéing
2 TB Bragg Liquid Aminos or soy sauce
1/2 tsp. agave or maple syrup or any preferred sweetener
Salt to taste
Instructions
- Heat the oil in medium pot, then sauté the onion and garlic.
- Add the gluten or meat substitute, cook for 2-3 minutes, stirring occasionally.
- Add the potatoes, carrots and celery, let it cook for 2 minutes.
- Add the tomato sauce, vegetable broth and bay leaves. Let it simmer and cook for 15-20 minutes or until the potato is cook enough. You may add green peas if you want to add an extra vegetables and color.
- Add the liquid aminos or soy sauce and season with salt.
- Serve warm over rice.
