Bittermelon with black soy beans (Ampalaya with tawsi)

Bittermelon is not everybody's favorite because of it's pungent bitter taste. There are different kinds that you can find in most Asian market, small, short or long in sizes, some are slightly bitter and some are extremely bitter. The bitter they are, the more it is even better, because it has more benefits to our health.


This recipe was made with black soybeans or tawsi that I bought from Asian market. For me it's too salty even after I drained and washed it. I decided to cook my own black beans to replace it on my next recipes to avoid the high amount of salt, because our family is in a low salt diet, to enjoy the natural flavor of the food besides, most food are already have salt content in it.


BITTERMELON WITH BLACK SOYBEANS


Ingredients


3 medium size Bittermelon, washed and slice in small pieces

1 medium onion, chopped

4 cloves garlic, minced

2 medium tomatoes, diced

1 can or 1/4 c. black soybeans or blackbeans, cooked

2 TB olive oil

1 tsp garlic powder

1 tsp onion powder

2 tsp nutritional yeast

1/2 c. vegetable broth or water

Salt to taste


Instructions


- Heat the pan in a low medium heat, then saute the onion, garlic, tomatoes, bittermelon and black soybeans.


- Add the vegetable broth or water, then season with the rest of the ingredients. Let it simmer but don't overcooked.


- Serve warm over rice
