PINEAPPLE BLUEBERRY BUNDT

10-12 Servings


Ingredients


2 1/2 Whole Wheat Pastry Flour

2 1/2 TB Baking Powder

1/2 tsp Salt

1 1/4 c. Cane Juice Crystals

1 c. Crushed Pineapple

1 TB Lemon Juice

1 1/2 c. Coconut Milk or any preferred milk

1 1/4 c. Frozen Blueberries


Instructions


- Preheat the oven to 350 degrees. Spray the bundt pan with oil and set aside.


- In a mixing bowl, combine the flour, baking powder, sugar and salt and mix with the whisk.


- Add all the wet ingredients including the crushed pineapple and stir until all the ingredients are well combined.


- Add the frozen blueberries in the batter and fold in gently.


- Pour the batter into the sprayed bundt pan and bake for 30-40 minutes or until the toothpick inserted in the middle comes out clean. Remember that different pans vary the baking time.


- After the baking time, let it cool on a wire rack before serving.


- Serve it plain or serve it with glaze.
