Creamy homemade potato soup is an all time favorite of our family and friends wether it be in cold or warm season, everyone will enjoy it. This recipe gives you option to shred or dice the potatoes, to get some chunky pieces and nice texture. Garnish with croutons and flat parsley leaf as you serve them to your guest.
CREAMY POTATO SOUP
Ingredients
4-5 large potatoes (red, yellow or white), shredded
2 TB Olive Oil
1 onion, diced
1/2 c. celery, diced
2-3 cloves garlic, minced
5 c. Vegetable broth or water
2 c. Milk, plant based & unsweetened
3 TB Nutritional Yeast
2 tsp onion powder
1 tsp garlic powder
2 tsp parsley flakes
Salt to taste
Instructions
In a large pot, add the olive oil and sauté the onion, garlic & celery until they turned clear.
Add the rest of the ingredients except the slurry. Let it simmer until the potatoes are cooked.
Add the slurry, keep stiring until it starts thickening. Then turn the heat off.
Serve hot or warm in a bowl.
