Summer is here and the abundance of fresh vegetables and herbs are everywhere. Grilling indoor and outdoor are ways to to cook them and share the fun with family and friends.
GRILLED VEGETABLES
GRILLED VEGETABLES & TOFU
Ingredients
2 medium Zucchini
2 medium Summer Squash
16 oz Baby Portabello Mushrooms
1 large Red Onions
1 medium Red Bell Pepper
1 medium Green Bell Pepper
2 sprigs of fresh Rosemary
3 sprigs of fresh Thyme
handful of fresh Parsley
Smoked Paprika
Olive oil
Salt
Note: Most people use black pepper on grilling
Mix all ingredients and marinade for an hour or more, then grill individually or in skewers
