GRILLED ZUCCHINI

GRILLED ZUCCHINI

Yields: 6-8 rolls



You will need:


2 medium zucchini, sliced length wise

1 medium red bell pepper, washed, cut in strips

Handful of spinach

1/2-3/4 c. Soy Sour Cream

Fresh dill for sprinkle

Hemp seeds for sprinkle

1 Bunch of Green onions


Instruction


- Clean and wash the zucchini, cut the ends and slice lengthwise.

- Grill the zucchini in a grilling pan or an outside grill. Do not overcook.

- Lay each pieces of grilled zucchini, spread soy mayonnaise and sprinkle some dill.

- Layer the spinach and red bell pepper.

- Roll each one and tie with green onions.

- Chill and serve side up showing part of the spinach and peppers.
