HIGH PROTEIN CHILI BLACK BEANS




This chili bean recipe is loaded with high protein black beans. Here's a quick fix recipe for you, but you will need less than an hour of preparation, but if you're too busy, crockpot is one of the best way to cook it, just dump everything and cook it overnight. To make bean soup, consider adding more broth and serve it with a slice of baguette, but it is more filling when served over a bowl of rice, quinoa or other grain.


Ingredients


1 TB. olive oil

1 red onion, chopped

1/2 green bell pepper, chopped

1/2 red bell pepper, chopped

3 garlic clove, crushed

2 tsp. chili powder

1 tsp cumin

1 Tbs. paprika

1 tsp chipotle seasoning

1 28-ounce can crushed tomatoes

1 1/2 - 2 c. vegetable broth

2 16-ounce can black beans

1 c. homemade ground seitan (optional)


Instructions


- Heat the oil in a large pot over a medium heat.

- Add the onion and bell peppers and cook until soft and slightly browned, for about 3-4 minutes.

- Add the garlic and spices to the vegetables and stir until fragrant, for about 25 seconds.

- Stir in the crushed tomatoes, vegetable broth and beans.

- Simmer for 40-45 minutes to an hour.

- Serve and topped with avocado, vegan sour cream and sliced green onions.
