VEGAN GRILLED STEAKS

This grilled steaks are made from the protein part of the wheat which is commonly called gluten. I also use this recipe to make meatless BBQ in skewers. I always stock more in my freezer after it cooled down from the steaming process. It's great for stews, ground pieces for tacos, add on for stir fry or any kind of vegetables.




MEATLESS GRILLED STEAKS

Yield about 24 medium size steaks


Ingredients for steaks


5 c. Gluten Flour

3/4 c. Chickpea Flour

1/2 c. Nutritional Yeast

2 TB Garlic Powder

2 TB Onion Powder

1 1/2 TB Umami Mushroom Seasoning (optional)

BBQ Grilling Seasoning (for sprinkle)


3 c. HOT Vegetable Broth (low sodium)

1/2 c. Liquid Aminos or Soy Sauce

1/4 c. Maple Syrup

5 TB Kitchen Bouquet Browning Sauce

2 TB Liquid Smoke

2 TB Miso Paste (white)

2 TB Dijon Mustard

1 TB Lemon Juice


Direction


- Prepare the steamer by adding water, about half of the bottom pan. Turn the heat on high but turn the heat down on medium high once it starts boiling.


- In a large bowl, mix all the liquid or wet ingredients. Set aside.


- In another separate bowl, mix all the dry ingredients then add it in the liquid ingredients. Mix until it is fully combined, then place in the work surface. (I use my hand and spatula to be able to scrape the sides of the bowl. It will be easier if you have a stand mixer using the medium speed for at least 2 minutes then up to 4-5 minutes by hand, but you may need to add more gluten flour if the dough is too wet).


- Divide the dough into two parts and form into a log. Slice each log about 1/2 inch thick, then press and stretch each dough slices.


- Place each dough slices in the steamer pan. Steam for 25 minutes, then flip the other side and steam for another 20 minutes.


- Brush each steak with the glaze or sauce and sprinkle with the steak spices on each side.


- Place the steaks on a hot grill or grilling pan. Glaze and cook for 2-3 minutes on each side, until the grill marks on each side. Do not overcook to prevent on getting a tough and rubbery texture. They are already cook anyway.


- Serve with sauce.






GLAZE & SAUCE

Yields about 1 Pint


Ingredients for the glaze and sauce


1 c. Sweet Chili Sauce

1/4 c. Liquid Aminos or Soy Sauce

1/4 c. Italian Dressing

1/2 c. Ketchup

1 TB Lemon Juice

2 tsp. Smoked Paprika

1 tsp. Garlic Powder

1 tsp. Onion Powder


- Place all ingredients in a pint jar then stir it with sauce whisk.
