This meatloaf was made from the protein part of the wheat which is commonly called gluten. It is very versatile, you can use it in so many ways like sandwiches, chopped up for stew, ground up to make tacos and more. Being creative goes a long ways, making this recipe from scratch saves you some money as well.
Ingredients to make the loaf
Yields 2 medium loaves
3 c. Gluten Flour
1 c. Chickpea Flour
1/2 c. Nutritional Yeast
1 1/2 TB Garlic Powder
1 1/2 TB Onion Powder
1 1/2 TB Paprika
3/4 c. Liquid Aminos or Soy Sauce
3 TB Vegan Worcestershire Sauce
2 TB Ketchup
1 TB Lemon Juice
2 TB Maple Syrup
1 TB Liquid Smoke
2 1/2 c. HOT Vegetable Broth (low sodium)
Instructions
- In a large bowl, mix all the liquid ingredients. Set aside.
- In a separate bowl, mix all the dry ingredients.
- Add all the dry ingredients into the liquid ingredients bowl. Mix until it forms into a dough.
- Knead for about 3 minutes until all the ingredients are completely mixed together. Add more gluten flour if it is too wet or if needed.
- Divide the dough into two parts and form it into a ball. Flatten each dough using the rolling pin, then add the filling. Roll it carefully into a log shape, then close and pinch the edges. Make sure that each dough are evenly formed.
- Transfer each one into a parchment paper, roll it up and twist and tie both ends, leaving at least an inch on each side to allow the dough to expand while cooking.
- Put some water into the steamer, about half of the pan and bring it to a boil. Put the loaves into the steamer pan for about an hour.
- Remove the loaves out of the steamer and allow it to cool down.
- Cut the knots on each end. Slice and serve it with brown gravy or glaze it.
Ingredients to make the filling
2 stalks Celery Sticks
1 medium Carrots
1 medium shallots
1 cup mushrooms
1 TB mixed seasonings (garlic & onion powder, celery salt, parsley & nutritional yeast)
1/2 c. Pecans
1/2 c. Walnuts
1/2 c. Cranberries, sweetened
Instructions
Clean, peel and cut all the vegetables about an inch small. In a chopper or food processor, combine all the vegetables and coarsely grind them. In a small medium pan, sautee all the vegetables and add seasonings until all the moisture is absorbed. Set them aside.
Combine all the nuts and cranberries and grind coarsely in a chopper or food processor.
