OVEN ROASTED MIXED VEGETABLES

This is our family's all time favorite for all season. We serve this dish pretty much every week with steamed rice or flat bread. Adults and little kids in the household absolutely love this recipe. It is also a bomb when I serve this on potlucks or any other occasion. It is super easy, very appealing in color and in taste, very nutritious and totally healthy.



OVEN ROASTED MIXED VEGETABLES


Ingredients:

8-10 servings


1 c. Brussel Sprouts, cut in halves

1 lb. Asparagus, cut in 3 in. long

1 c. Broccoli Florets

1 c. Cauliflower Florets

1/2 c. Red Onion, 3/4 diced

1/2 c. Red Bell Pepper, 3/4 diced

1/2 c. Green Bell Pepper, 3/4 diced

1 c. Portobello Baby Mushrooms, cut in quarters

1 small Zucchini Squash, 3/4 diced

1 small, Yellow Summer Squash, 3/4 diced


Season with:


3 TB Olive Oil

1 TB Fresh Squeeze Lemon Juice

1 TB Nutritional Yeast

1 tsp. Garlic Powder/Granules

1 tsp. Onion Powder/Granules

2 tsp. Smoked Paprika

1 tsp. Herbs (basil, oregano, thyme, parsley)

1 tsp Salt or more to taste


Mix all ingredients in a large bowl until they are fully coated with oil and seasonings. Bake 400 degrees Fahrenheit for 20-25 minutes. Stir them occasionally.


Serve over rice, pasta or flat bread.
