OVEN ROASTED VEGETABLES with tofu

You will need:


Brussel sprouts, tri-color carrots, onions, garlic, zucchini, red and orange bell pepper, yellow squash and broccoli.


Drizzle with olive oil, smoked paprika, garlic & onion powder, nutritional yeast and salt.


Bake 400 degree for 20-25 minutes. Stir occasionally to prevent from burning.


Add the baked tofu on the pan and combine with all the vegetables.



To bake the tofu:


- Drain and squeeze the water from tofu

- Slice in cubes or strips

- Marinate for 15-30 minutes

1/4 c. Bragg Aminos or any low sodium soy sauce

1/2 tsp sesame oil

1 TB lemon juice

1/2 TB Nutritional Yeast

1-2 tsp Raw Agave or maple syrup

1/2 tsp garlic powder

1/2 tsp onion powder


Place all ingredients in a large ziploc bag, a container with lid or a bowl. Mix or stir to make sure the tofu absorbs the marinade mixture.


Bake 350 degrees for 20-25 minutes.
