SCRAMBLED TOFU with spinach

This recipe is our family's all time favorite. Extra firm organic tofu is always on our weekly staple and grocery list. I guess we can't live without it like none vegans who can't survive without their eggs. This recipe is very versatile because you can always add any of your favorite herbs and spices and veggies.





Scrambled Tofu

Ingredients

2 TB Water

1 onion, diced

2 cloves garlic, minced

1/2 c. mushrooms, diced

2 medium tomatoes, diced

1 lb. block of extra firm organic tofu, pressed & crumbled

1 tsp. curry powder

1 tsp. turmeric

1 TB Nutritional Yeast 

1 tsp. onion powder

Salt to taste

1 bunch of fresh spinach

INSTRUCTION

1.  Gather all the ingredients.

2.  Sauté the garlic, onion, mushrooms and tomatoes in water in a large skillet. Allow to cook for 3-5 minutes.

3.  Add the crumbled tofu and stir.

4.  Add the curry powder, turmeric, nutritional yeast, onion powder and salt.

Stir well to make sure the spices coat the tofu well. Cook for 2-3 minutes.

5.  Add the spinach, cover the pan and cook for 1-2 minutes. Stir well until all the spinach are wilted.
