Steamed Asparagus with sautéed mushrooms






STEAMED ASPARAGUS with sautéed mushrooms


Ingredients:


2 lbs. Asparagus, washed and cut the hard ends


1 lb. Mushrooms, slices

1 medium onion, chopped

3-4 cloves garlic, minced

1 TB Fresh lime juice

2 TB Soy Sauce

1 TB Nutritional Yeast

1 1/2 tsp Fresh Rosemary, chopped

1 TB Fresh Parsley, chopped

2-3 TB Olive oil

Salt to taste


Instructions:


Cook the asparagus using a steamer or just simply use a pan with added water. Cover and let it cook for 2-3 minutes, depending on the size of the asparagus. Do not overcook, then set aside.


In a pan, add the oil and sauté the onions, garlic and mushrooms. Stir it for about 1 minute until the mushrooms extract it's own moisture, then add the rest of spices and seasonings. Simmer for about 30 seconds.


Place the asparagus in a platter with sautéed mushrooms.
