STEAMED KALE with imitation bacon bits

Kale is a green leafy vegetable that is high in fiber. It is actually has more nutritional value than spinach. It is also a good source of Vitamin C, iron, potassium, B6, calcium, vitamin K and antioxidants. It is perfect to serve as a side dish, salad, chips or addition to smoothies and soup recipes. I always get organic kale from the market to get the perfect flavor in my dish. Try this simple recipe and feel free to explore and add anything you wanted. Enjoy!



STEAMED KALE


Ingredients


1 bunch of fresh organic kale, washed & chopped

1 medium size red onion or shallots, small diced

3 -4 cloves of garlic, minced

2 cups vegetable broth, unsalted or low sodium

1/2 c. vegan bacon bits

1 tsp garlic powder

1 tsp onion powder

1 TB nutritional yeast (optional)

Salt to taste


Instructions


- Saute the onion and garlic in small amount of water until the moisture is completely gone and turned lightly brown.


- Add the vegetable broth and bacon bits and let it simmer for 4-5 minutes.


- Add the kale, and the rest of the seasonings.


- Serve warm as a side dish or over rice.
