Tikka Masala is a type of food from the Indian subcontinent. "Tikka" refers to a piece of meat, such as a cutlet and traditionally from chicken. This recipe is vegan and was made with vegan chicken strips, very mild in spices and added extra vegetables such as eggplant and bokchoy and garbanzo beans for extra protein just to make it wholesome.
Note: You may substitute the vegan chicken strips with homemade vegemeat or any meat analog and add any of your preferred vegetables.
VEGAN TIKKA MASALA with vegetables
Ingredients
1 1/2 TB Oil
1 lb Chicken Veggie Meat, strips, slices or chunks
1 1/2 - 2 c. Vegetable Broth
1 15 oz. Tomato Sauce
1 1/2 c. Coconut Milk
1 small onion, diced
3 TB tomato paste
3 cloves garlic, peeled & minced
1 tsp fresh ginger, grated
1 tsp Garam Masala
1 tsp Chili Powder
1 tsp Turmeric, ground
Salt to taste
2-3 TB Cilantro, chopped
1 c. Cooked Rice
Instructions
Step 1 - Heat oil in a large pot over medium heat. Add the veggie chicken, onion in the pot and cook until golden brown for about 5-6 minutes.
Step 2 - Stir in the tomato paste, garlic, ginger, garam masala, chili powder and turmeric powder until the garlic turned lightly brown.
Step 3 - Add the tomato sauce and vegetable broth and season with salt. Bring it to a boil, once it starts boiling, reduce the heat and simmer. Stir occasionally and let it simmer for about 10 minutes.
Step 4 - Add the cashew cream and stir for about a 2-3 minutes.
Step 5 - Serve warm over rice and garnish with cilantro.
