Ingredients:
3 1/2 c. Flour (I used half and half of spelt & white flour)
1 1/2 c. Cane Juice Crystals
3 TB Baking Powder
1 tsp. Salt
2 TB Golden Flaxseed Meal plus 4 TB Water
1 can Coconut Milk
1 c. Crushed Pineapple
1/2 c. Carrots, shredded
Instruction:
Preheat the oven to 350 degrees
Mix all the dry ingredients in bowl #1
Mix all the wet ingredients in bowl #2
Combine the wet ingredients with the dry ingredients and mix well without the lumps.
Transfer the mixture into an oil sprayed bundt cake pan.
Bake 350 degrees for 45-55 minutes or until the inserted toothpick come out clean.
Let it cool in a wire rack
