There's nothing like homemade fresh mung beans sprouts..so delicious! This recipe is gluten free and mostly made with fresh vegetables. The key is not to overcook the sprouts because our body benefits with so much nutrients from it. This recipe can be served as a topping on Asian noodles or rice. Hope you'll enjoy it.
SPROUTED MUNG BEANS with Tofu
Ingredients
3-4 c. Sprouted Mung Beans
3/4 c. Carrots, short julienne
1/4 c. Peas, fresh or frozen
1 medium Onion, chopped
3-4 Cloves, garlic, minced
2 TB Olive oil
1 tsp. Onion Powder
1 tsp Garlic Powder
2 tsp Nutritional Yeast
1 tsp Sesame Oil
Salt to taste
1 pk. Firm Tofu, baked or fried & rectangular pieces
Chives for garnish
Instructions
Place a regular size pot on a medium high heat and start sautéing the onions and garlic in oil until the onions becomes clear.
Add the carrots and sauté for 2 minutes, then stir in the peas and sprouts and all the seasonings for another minute then turn the heat off.
Place in a serving dish, serve and top with tofu and garnish with chives.
