Curry as we use the word, describes as a style of cooking with a spiced and seasoned gravy, sauce or paste, however you want to name it. India is the home of curry and very well known in making this particular dish. Then later on followed by closed by countries in Asia specifically in Thailand. Now, there's over 20 percent of the world population adopted this cuisine as their main diet.
There are few kinds of curry paste that I am aware of and are originated from India and Thailand. Our family is not a fan of spicy dishes, but when I make this, I always make sure that it is not loaded with hot and spicy ingredients.

VEGAN SEITAN/MEATLESS CURRY
Ingredients:
2 cups Homemade Gluten Meatless Meat, cubes or strips
1 can Coconut Milk (1 3/4 c. )
1/2 Water
3 tsp. Curry Powder
1 TB Nutritional Yeast
1 tsp. Garlic Powder
1 tsp. Onion Powder
1/2 tsp. Turmeric
1 tsp. Salt
2 TB Olive Oil
1/4 c. Red Bell Pepper, diced
1/4 c. Green Bell Pepper, diced
1/2 c. Potatoes, diced
1 medium Onion, diced
3 cloves Garlic, chopped
1 cup Frozen or Fresh Mixed Vegetables (Peas, Greenbeans, Carrots)
Instruction:
In a pot, saute onion, garlic, bell peppers and mixed vegetables. Then add the meatless meat, stir it until it is slightly brown. Add the coconut milk and let it simmer for about 15 minutes, then add the water and all other seasonings and simmer it again for another 10 minutes. Serve it warm and garnish with chopped green onions.
