Gluten Free Waffles
Ingredients
1 1/4 cup unsweetened almond milk or any preferred milk
2 tsp fresh lemon juice
1/4 cup melted coconut oil or any preferred oil
1/4 cup maple syrup or agave nectar
1/2 heaping cup gluten-free rolled oats
1 3/4 cups gluten-free flour blend
2 tsp baking powder
pinch of sea salt
Instructions
Combine the milk and lemon in a small mixing bowl and let set for a few minutes to activate.
Then add the oil, agave nectar or maple syrup and whisk and set aside.
Add dry ingredients to a large mixing bowl and whisk until well combined.
Add wet ingredients to dry and mix well. Add more sweetener if desired.
Let it set for 5-10 minutes while your waffle iron preheats. (Set it on higher temperature for crispier waffle, but adjust it according to your preference).
Once waffle iron is ready, generously coat with non-stick spray and pour about 1/2 cup of batter. Cook according to waffle maker manufacturer instructions and then remove and place on a baking rack in a 150 degree oven to keep warm. Do not stack them together, instead keep them in a single layer to ensure the crispiness.
Serve immediately with desired toppings, such as fresh berries and more maple syrup.
Store leftovers in a freezer bag and reheat in the toaster for best results. Will keep in the freezer for up to two months.
